Apple Crumble Cake

  • 1 pinch sea salt
  • 200 g wholemeal spelt flour (approx.cups)
  • 3 apples (Granny Smiths in case you are shopping for particularly) peeled and 1cm cube

Methodology

Begin with the crumble.

  • In a meals processor or by hand combine the butter, sweetener, spelt and cinnamon till a heavy crumb varieties.

  • Then fold within the flaked almonds and put aside.

Now make the cake.

  • In a meals processor or by hand combine the butter with the yoghurt, sweetener and egg till creamy and effectively mixed.

  • Add the cinnamon, baking powder, bicarb and sea salt. Combine collectively.

  • Fold within the flour till simply mixed.

  • Place the cake batter into the tin. Unfold the apple over it and high with the crumble. Press down somewhat.

  • Prepare dinner for 35-40 minutes or till a skewer inserted into he center comes out clear.

Thermomix

  • Combine the crumble 1 minute, velocity 5. Then fold within the flaked almonds, 5 seconds, reverse velocity 4. Put aside.

  • With out washing the bowl, soften the butter, 1 min, temp 90, velocity 3.

  • Add the yoghurt, sweetener and egg and blend 30 seocnds, velocity Four till creamy and effectively mixed.

  • Add the cinnamon, baking powder, bicarb and sea salt. Combine 5 seconds, velocity 3.

  • Fold within the flour till simply mixed. Use the flour image for 3-Four turns.

  • Place the cake batter into the tin. Unfold the apple over it and high with the crumble. Press down somewhat.

  • Prepare dinner for 35-40 minutes or till a skewer inserted into he center comes out clear.

Variations

Gluten-free

Sub with a great high quality gluten-free flour. 

Dairy-free

Substitute the butter with macadamia nut oil and the yoghurt with coconut yoghurt. 

Egg-free

Substitute the egg with a chia egg. 

Nut-free

Omit the flaked almonds. 

Vegan

Selected the dairy-free and egg-free variations. 

Fructose pleasant

Select rice malt as your sweetener. Prime with a low-fructose berries as a substitute of apple.

Add a twist

Add berries or rhubarb to the apple or swap apples for pears.
