Don’t spend an excessive amount of time within the kitchen making this easy summer season recipe, with solely 5 important components, contemporary from the backyard.

Yields: 6 cups (serves 6)

2 cups contemporary corn kernels
2 cups small cherry tomatoes, quartered
1½ cups diced pink bell peppers
¼ cup cilantro, tough chopped
1-2 contemporary pink chili peppers, minced or a pinch cayenne pepper
1 tablespoon lime or lemon juice
1 tablespoon olive oil
1 tablespoon thinly sliced inexperienced onion
½ teaspoon minced garlic (about 1 clove)
½ teaspoon sea salt
1 avocado, diced

  1. In a big bowl, mix the corn, tomatoes, bell peppers, cilantro, and chili peppers. Add the lime juice, oil, inexperienced onion, garlic, and salt and blend properly.
  2. Gently fold the avocado.  Retailer within the fridge for as much as three days.

Serving suggestion: Served chilled.
